Self-Contained Kettle
Direct Steam Kettle

THE LEGION 316 KETTLE SYSTEM- is incorporated to help protect kettles from attack by chlorides contained in the water and corrosive acidic foods which will cause corrosion and pitting. HACCP compliance increasingly is becoming an issue in the foodservice industry that will require scrutiny of the materials and construction of kettles. Legion has continued to improve the 316 Kettle System to now include:
  • Deep Drawn Shells- Legion steam kettles are deep drawn from one-piece stainless steel blanks in gauges required to qualify for ASME inspection and stamping. There are no joints, welds or the need to grind and polish welds in Legion shells. This outstanding design feature sets Legion kettles apart from competitive designs using shells made of welded sections. A seamless drawn shell is the superior design for sanitary and structural requirements and eliminates the possibility of weakened joints. Also, all the inner shells (liners) of Legion kettles are manufactured with 316L stainless steel to further reduce the potential for corrosion and pitting in the food contact zone and provide HACCP compliance.
  • 316L Stainless Draw-off Tube - Constant exposure to food products during preparation makes this a critical area of the kettle.
  • 316L Stainless Welding - Legion uses only 316L stainless welding on all parts to assure consistency of the metal and reduce the chances of stress corrosion at the weld.
  • 316 stainless compression draw-off valves
INSULATION
  • Protects operators from burns, reduces Worker's Compensation costs, increases efficiency, and keeps the kitchen environment comfortable. All Legion self-contained kettles and the direct steam LTI and LOW-RIM™ LSI kettles are insulated. Legion considers insulation an essential feature in today's safety conscious environment.
RADIUS LIP RIM WITH CASING
  • Self-contained kettles and the direct steam LTI and LOW-RIM™ LSI kettles are provided with an exterior 304 stainless casing to enclose the insulation. The casing is completely seam welded to the rim providing a surface surrounding the kettle that is extremely strong, safe to touch, easy to clean, and meet HACCP requirements.
LIDS
  • Legion kettle lids are the most rugged available, designed to provide years of trouble free service. Heavy duty hinges and domed lids are manufactured with 304 stainless.
CONTROL BOXES
  • Self-contained kettle components are enclosed with a 304 stainless enclosure seam welded around the complete perimeter attaching it to the casing. A kettle boiling over will not penetrate the enclosure causing damage to the controls.
ASME CODE SECTION VIII
  • All Legion kettles - steam, gas or electric - are designed and built in compliance with the requirements of the latest ASME code and are stamped and/or shop inspected as specified.
MADE IN THE USA
  • All Legion products are made in the USA.

Paddles: Incomparable choice, these heavy-duty paddles with blending perforations are ideal for stirring any consistency of food product in large kettles.

Whips: Perfectly balanced, these heavy duty mixing tools offer the ultimate in stirring and mixing action with less effort.

Paddle Scrapers: These are ideal for the stirring and cleaning action in kettles, skillets or the Skittle. Every paddle scraper, no matter how hard they are used, will not scratch or leave black marks on stainless steel.

Ladles: Ergonomically designed L-shaped handle places hand directly over the center of gravity allowing a comfortable reach deep into the kettle and efficient transfer of food product.

No one would think of installing a walk-in cooler without insulation. However, cooking equipment operating at high temperatures without insulation protection is installed without a thought. The chart below highlights the merits and sensibilities of not insulating either piece of equipment. Which piece of equipment do you think should be the first one to insulate?

Which Piece of Equipment Should You Insulate . . .
Function Walk-in Cooler Steam Kettles
Temperature differential between equipment and kitchen -40°F 200°F (1)
Energy loss (inefficiency) None 7800 Btu/Hr. (1)
Impact on air conditioning load None 7800 Btu/Hr. (1)
Hazard to employees None Severe burns
Impact on Workers' Compensation None Accidents will be recorded. Severity of burn may cause a lost time accident.
Insulation provided 4 inches None
1) Based on a 60 gallon direct steam kettle operating at 30 psi and 274°F.

Risk Analysis and Cost Impact - No Insulation
Function Walk-in Cooler Braising Pans, Steamers, Steam Kettles
Initial capital cost Less Less
Production Efficiency None Reduced
Operating Cost Higher, but reduces A/C cost Much higher
Potential injury None Significant
Potential Liability None High risk of lawsuit - open ended cost impact

Current regulations and the high probability of litigation by "injured" equipment operators, dictates that all cooking equipment should be insulated. The responsibility for protection of employees rests with the employer . . . choose insulated products for all your equipment needs!

Legion Industries is the only manufacturer to provide insulation as STANDARD on the COMBI-PAN Series and all Self-Contained Kettles. Insulation is offered as an option on all Direct Steam Kettles and must be specified by the end-user.

Insulation Saves You Money and Protects Your Employees
KEEP THE HEAT IN THE EQUIPMENT COOKING FOOD . . .
AND OUT OF THE KITCHEN!
SAVE ON LABOR COSTS
