CAPSULE LID
  • Fully insulated 304 Stainless - Maximum heat retention, efficiency and quick recovery. "Cool to the touch" - cooler, safer environment.
  • Lifts vertically for full visibility and easy access to food. No open doors with hot exposed surfaces in crowded kitchen aisles.
  • Lid holds steam when raised - Elimination of harmful blast of steam. (see Steamer).
  • Removable cassette racks- Pans removed to right or left without interference of door. Enhanced visibility. Up to 15 (2.5") insert food pan capacity. Also holds 4" and 6" pans.
  • Adjustable rear vent releases excess steam.
  • "L-Lid" Closure - Spills remain outside cooking compartment; condensation remains inside. Easily cleaned and safe from hidden bacteria. No door seals, gaskets, or solenoids to replace.
