The Combi-Pan® has revolutionized the frying industry as the only tilting skillet rated as a deep fat fryer with ANSI standards listing - for both gas and electric models. The Combi-Pan's patented heating system combined with the fully insulated construction of the pan body allows frying to be done at lower temperatures. The lower temperatures produce a moist, tender product, preserves the water content in the food, reduces the absorption of fat, and extends the life of the oil.
The Combi-Pan is the only fryer that does not require a cold zone as commonly found in traditional fryers. The pan body of the Combi-Pan acts like a heat reservoir holding all the oil at a consistent cooking temperature even when cold product is added.
